200+ pounds of the best pork you’ve ever had arrives Tuesday, gets cooked Wednesday and served to you Wednesday night. Can’t have pig without beer so…we will pour a flight of pints from our favorite award-winning Albuquerque brewers, Boxing Bear. It’s Pig-and-Beer!
Robert Kyzer humanely raises heritage pigs in Albuquerque’s South Valley and supplies all of Common Fire’s pork. He brings belly and bones for the pork-and-noodle soup, shoulder for the bo-ssam and rib-roasts we trim to 1-pound-plus roasted chops.
Tonight, Robert Kyzer brings the whole dang pig!
Robert Kyzer will haul his iron-and-steel smoker/roaster, set up on Common Fire’s patio and cook one-half of that pig. Andrew Horton, our chef, will rely on our 5000-pound clay hearth (Millicent) to slow-roast the other half. It’s the Battle of the Pig Halves!
Party starts at 6:30 Wednesday.
This event is a stand-up/move-around party, not a sit-down dinner. Arrive when ready: eat, drink, socialize, repeat. We are limiting ticket sales to 100 guests so plenty of pork for all. Horton will conjure picnic sides to accompany.
Our friends at Boxing Bear just came away as “best new brewer” and “best new brewpub” from the Great American Beer Fest, picking up gold for their chocolate milk stout and an intense double red ale. They also walked with the winner’s trophy from the New Mexico IPA Challenge. Track these guys!
